Step-by-step instructions with photos for Easy Banana Pancakes:
• Sift plain flour, baking powder, cinnamon powder (optional), salt, baking soda and keep aside.
• Mash overripe bananas with a fork.
• To this add milk, vanilla extract, egg, melted butter, sugar and whisk well until all the sugar has melted.
• Then add sieved flour mixture and mix gently with a spatula until just combined - DO NOT overmix.
• Heat a pan on low heat and when it’s hot, add some butter and spread it around.
• Pour a large spoonful of batter on the pan and let it cook. Do not spread the batter, it will spread by itself and take a circular shape.
• When you start seeing bubbles on the top and when pan cake is golden brown from bottom, gently flip it over.
• When pancake is golden brown from both sides remove onto a plate.
• Make rest of the pancakes in this manner.
• While serving generously drizzle with some honey or maple syrup (optional).
• You can also add some sliced bananas (optional) and some toasted walnut pieces (optional).
• Delicious, Fluffy Banana Pancakes are ready to serve. Enjoy!
