A popular traditional snack from Maharashtra, western state of India, Bhadang is made using puffed rice / kurmura / murmura, peanuts and a mix of spices.
Crunchy and spicy, this Indian puffed rice snack seasoned with a blend of spices is perfect to munch on during teatime or whilst watching your favourite television serial or a movie.
Flavours that make Bhadang unique
Although the process of making this Masala Murmura might seem similar to that of making normal Chivda, these two snacks definitely taste different.
Maharashtrian Bhadang is spicier than normal chivda. A mix made with black salt (kala namak), dry mango powder (amchur) and other ingredients give this Murmura Bhadang a unique and slightly tangy taste. A blend of spices like red chilli powder, turmeric powder, mustard seeds, green chillies, curry leaves give this Mamra recipe a spicy kick as well as make it flavourful. Fried peanuts make this Marathi Padarth even more crunchy.
The star ingredient that adds a whole lot of flavour to this dry snack recipe is GARLIC. Fried, golden brown garlic with its crunchy texture and strong flavour and aroma does elevate this teatime snack to a whole new level.
Making Perfect Bhadang
Even if it’s a straightforward process to make this Maharashtrian recipe, there are a few points to remember.
Roasting Murmura / Puffed Rice is important: Store bought kurmure / puffed rice does lose its crispiness over time as it might be packed for long. So, it’s always best to slightly roast the Bhadang murmura till it becomes crispy again and easily crumbles when pressed between your fingers (as shown in the video).
Only use Powdered Sugar: Don’t use normal granular sugar when making the mixture with black salt, dry mango powder and salt or else spices won’t stick well to spicy murmura / puffed rice, will settle down and Bhadang Chivda won’t be as flavourful. Powdered sugar from the mix easily melts when added to the hot tempered puffed rice and quickly sticks to every rice puff. This melted sugar also helps other ingredients to adhere well to each and every rice puff making this Diwali faral extremely flavourful.
Crush Garlic only slightly: Remember to only crush garlic slightly (and not to make a garlic paste). Fry it well till it turns extremely aromatic and golden brown. These crispy, golden brown garlic pieces are what make this Murmure ka Chivda extremely flavoursome and set it apart from other types of chivdas.
Fry Green Chillies and Curry Leaves well: Fry these two ingredients till they lose their moisture, turn dry, crispy and change colour. If they are not fried enough, this spicy Bhadang recipe might not stay crispy and crunchy for long and might spoil quickly.
Let it cool down completely: Do not store this Murmure Chivda recipe while it’s still warm, let it cool down completely before storing in an air-tight container or else it might lose its crispiness.
