Quick, easy to follow video of how to make Cream of Tomato Soup:
Enjoyed by everyone across the world not just as a starter, but also as a main course, accompanied with some crusty bread, this delicious Tomato Soup is a classic comfort food; perfect as a meal during cold weather.
Made with only a few basic ingredients normally at hand in your kitchen pantry, this creamy Tomato Soup recipe is very easy to make.
Spices & Ingredients to make it Thick, Creamy & Delicious
Spices like cumin seeds(Jeera), cinnamon (Dalchini), black peppers (Kali Mirch), seeds of black cardamom (Badi Elaichi) along with ginger and garlic make this Tomato Soup so flavourful.
Beetroot and Kashmiri Chilli Powder gives this Homemade Tomato Soup that intense red colour without any artificial colours. Using Kashmiri Chilli Powder instead of normal red chilli powder helps to enhance the colour of the soup without adding in too much of heat. But if you don’t have Kashmiri Chilli Powder, you can always use normal red chilli powder, only reduce the quantity slightly so that this Tomato soup doesn’t become too spicy.
Cooked onions, after they are ground, help to thicken this soup and so does the cornflour. Cornflour is the star ingredient of this dish. Cornflour slurry helps to make this soup not just thick but also creamy. Remember to add it slowly whilst stirring continuously so that it integrates well with other ingredients, and you don’t have lumps in your soup.
Slight sweetness from sugar and tomato ketchup helps to balance the flavours and sourness of tomatoes. You can omit adding ketchup if you don’t like it, but adding slight amount sugar does enhance the taste in my opinion. But the choice is yours, you can reduce the amount of sugar or skip it entirely if you don’t want it.
Finally fresh cream, another star ingredient, to make this soup silky smooth and nice and creamy. If you don’t have fresh cream at home and are not serving this Tomato soup to any guests or for any special occasion; you can replace fresh cream with whole milk. But always add it after switching off the heat or it might split.
Golden Crispy Croutons
Croutons are like the icing on the cake for this Cream of Tomato Soup. Crispy croutons, as soon as they dive into the soup, start sucking it up and become so very delicious! For me having Cream of Tomato Soup is incomplete without adding croutons on top.
Buttery croutons can so easily be made at home with some white bread, as shown in the video above. But if you are in a hurry, you can buy readymade croutons that are easily available in any supermarket or skip adding them entirely.
But, if you are adding them, remember to add them right at the END, just before serving or they will become too soggy and not pleasant to eat!
Make it Healthier
If you really like this creamy Tomato Soup and want to make it regularly for your usual meal, but are worried about the calories, you can make it healthier.
Reduce the amount of butter used. Replace cream with whole milk or skip it entirely. Instead of croutons, use small pieces of toasted whole meal bread.
Skip straining the purée so that the soup has more fibre in it, making it good for your digestive system as well as saving you some time.
If you want to serve a healthier version to kids and want them to eat more vegetables, increase the amount of carrots and beetroot. You can even add in some celery and red bell pepper (capsicum) and kids won’t even know and will happily have it as a Cream of Tomato Soup 😊
Adjusting the recipe will mean that the flavours and texture of this Tomato Soup will change slightly, but if its going to be healthier, then it’s a small compromise to make and you can have it more often without worrying about the calories ….
This Cream of Tomato Soup recipe is very versatile and can be adjusted and customised to your liking. You can increase or decrease the amount of spices, sweetness, butter, cream and vegetables to your taste.
This hearty, healthy and comforting Tomato Soup is definitely one of my favourite! Try making it and it will be yours too...
