Sift plain flour, baking powder, cinnamon powder (optional), salt, baking soda and keep aside.

Mash overripe bananas with a fork.

To this add milk, vanilla extract, egg, melted butter, sugar and whisk well until all the sugar has melted.

Then add sieved flour mixture and mix gently with a spatula until just combined - DO NOT overmix.

Heat a pan on low heat and when it’s hot, add some butter and spread it around.
