For me Murmura ke Laddu is more than just a sweet treat; it's a nostalgic bite into my childhood. As a kid I was not that fond of sweets/desserts. The only sweets I really enjoyed were Rava Laddus and Shankarpalya during Diwali and these Kurmura Ladoos, Tilgul and Gul Papdi during winter months. If given a choice between different Laddus, I use to always choose Murmura Ladoo.
Making Murmura Laddu Basics

Mamra Ladoo has a unique texture and flavour. Made primarily from puffed rice (Murmura / Mamra / Kurmura) and jaggery (Gur), this Murmura Laddu recipe also includes some ghee (clarified butter), a pinch of salt and some green cardamom powder. Puffed rice / Mamra gives these Laddus a light and crispy texture, jaggery (gur) gives it a sweet taste and a hint of caramelized flavor while ghee (clarified butter) adds a rich and buttery flavor. Tiny bit of salt and green cardamom powder goes a long way to enhance the flavour of this sweet treat.
"Foolproof Method and Simple Process to make Murmura Ladoo"
While the process of making these Puffed Rice Laddu is simple, creating the perfect Murmura Gud ke Laddu can be tricky. The secret lies in getting the consistency of syrup just right. The foolproof method that I have shared in this post will ensure that you get perfectly crisp Kurmuryache Ladoo each time, that are neither soft nor too hard.
Before making this Murmura Ladoo recipe always roast Puffed Rice on low heat till they turn crispy and easily crumble when pressed (as shown in the video). Kurmura tends to soften when stored for long so roasting ensures that it turns crisp once again.
Always melt jaggery on low heat as the consistency of jaggery syrup can change quickly when cooked on high heat.

A foolproof method to know when jaggery syrup has reached right consistency is when jaggery has completely melted and syrup starts bubbling, add a few drops of syrup in water and check it in few seconds. Syrup should not dissolve or mix in water, and you should easily be able to form a small ball with it (as shown in the video).
Remember, getting the consistency of syrup right is the MOST important thing while making this Murmura che Ladoo recipe. Cooking syrup less will make laddus soft and cooking it for too long will definitely make laddus very hard, so keep a close eye on syrup once jaggery starts melting and cook on low heat ONLY.
Once syrup is cooked to the right consistency, the hard part is done. The only thing left to do is add green cardamom powder and Mamra, mix well and shape.
Green Cardamom (Elachi) Powder should be added after removing the pan from heat as it will retain its aroma and flavour if not added while cooking.
After adding Murmura make sure that it is well coated with jaggery syrup before shaping.
Shaping Kurmura Laddus Quickly
Its crucial to start shaping Murmura Jaggery Laddus IMMEDIATELY after adding Kurmura to the syrup. Jaggery syrup sets extremely fast as it cools down, so you need to QUICKLY shape the Laddus whilst syrup is still warm. After syrup cools down it will become immensely difficult to shape the Laddus.
Always dip your hands in water before shaping Laddus. DO NOT apply oil or ghee to your hands or shape Laddus without applying water as mixture will be very HOT and might burn your hands.
Even after being very quick if you find that there is some mixture left in the pan that cannot be shaped as it has cooled down, heat the pan very slightly on low setting ONLY till mixture becomes easier to shape. DO NOT heat for long or on high heat as syrup might cook further and make laddus hard.
While shaping make smooth spheres and aim for uniformity and consistency in size; this will make an appealing presentation while serving your Mamara Laddus.
Once Murmura che Ladus have cooled down completely, serve or store them in an airtight container. They should stay fresh for up to a week at room temperature.

• Cook whilst stirring till jaggery completely melts and you start seeing bubbles.

• Then check if syrup is done. Add few drops of jaggery syrup in a bowl of water and wait for a few seconds.

• Immediately start shaping laddus by applying water to both hands. As the mixture is very hot DO NOT apply oil or ghee to your hands or shape laddus without applying water, hot mixture might BURN your hands.
